9:00 Departure from Parma
9:30 Meeting with a Parmigiano-Reggiano producer. This local host is a historical producer whose activity started back in 1846. This is one of the few producers where you can still see the production from start to end: from the cows grazing the grass, to the milking, to the final King of Cheeses. You will be fully immersed in the production and discover all the secrets of the "behind the scenes", having the chance to see the worldwide famous cheese walls.
11:15 Visit to an authentic farm where you will have the chance to see black pigs and many more farm animals. You will see unique fruit and vegetable cultivations and the vineyards where local wines are produced. You wll get a general idea of the concept of "farm-to-table"
Next, you will be visiting the Antica Corte Pallavicina, a Medieval court, home to the Museum of Culatello di Zibello. You will visit the ageing cellars where this century-old cured meat rests for years and years, guided by an audioguide that will unveil the secrets of the making of this amazing product. The next part will be out in the open air, where you will walk through a path called the "Po Forest" where you can see, amongst other points of interest, free black pigs scampering loose.
The visit will conclude with a tasting of a wide array of the farm's products, including Culatello along with many more local cured meats served with breads and two matching local wines: dry Lambrusco and Fontana del Taro.
