We will stops at the Sanctuary of Santa Maria of Lourdes from where a breathtaking view over Verona from above can be admired. We will then continue along the river to admire some of the most beautiful monuments of Verona: the Roman Bridge, the Roman Theater and the monumental 16th century walls and gates, and the Scaligeri Castle. We will stroll through the city squares and monuments: Piazza delle Erbe (the old Roman center and now Market Square), Piazza dei Signori (the political center in middle age Verona), and finally Piazza Bra with the Arena, the Roman amphitheater. Day 6: Wine tour: Valpolicella, Amarone & Soave

The first wine tasting will be served at a winery producing Bardolino, a very pleasent light red wine obtained from grapes grown on the east coast of lake Garda. Although the three main grapes used to produce Bardolino are also used to produce Valpolicella, the two wines are quite different. This is partly because Bardolino generally contains less Corvina which adds body and structure and more Rondinella which has a relatively neutral flavor profile.

Visit to Valpolicella wine country and discover another amazing winery estate where you will taste the famous Amarone wine. Obtained from grapes dried in fruttaio (grape-drying building) for 100/120 days where the sugar fermentation is completed, Amarone is one of the most enduring wines among the great Italian wines. It has a very intense red color with garnet shades and a perfume that reminds of dried fruits, tobacco and spices due to the noble rot which develops during the drying process. The flavor is very fruity and fragrant, dry but highly soft, with a full body, warm, invigorating and robust.

Day 7: Discover Parma & Prosciutto factory tour and lunch

A visit in Parma must definitely foresee a glimpse of Piazza Duomo, where the Cathedral, the Baptistery and the Bishop’s Palace are to create a corner of rare medieval charm. The Duomo (secc. XI-XII) is one of the highest expressions of Romanesque with a beautiful façade and agreat atmospheric interior is in the shape of a latin cross, full of masterpieces; the Baptistery is a great octagonal monument is built with Verona pink marble; the Palazzo della Pilotta, built by the Farnese, guests the the wooden Teatro Farnese (among the most beautiful historic theaters in the world), and the National Gallery, certainly one of the most important Italian art galleries (Correggio, Parmigianino, Beato Angelico, Leonardo, Cima da Conegliano, El Greek, Van Dyck, Carracci, Sebastiano del Piombo, Tiepolo, Canaletto and so on).
A little further the neoclassical Teatro Regio, one of the most famous of Italy, celebrates the connections between Parma and opera.

Lunch will be served in a Prosciutto factory.  One of the earliest references to ham production in our region appeared about 100 BC in the writings of Cato, who described the practice of burying pork legs in barrels filled with salt. The meat was then dried and smoked. As the process of making air-cured Ham was refined, the smoking step was discontinued. During classical times, hams from the region were one of the delicacies featured on banquet tables.

Day 8: Parmesan cheese and balsamic vinegar tour

Today we will assist to the Parmigiano-Reggiano cheese production. Parmigiano-Reggiano is strictly bound to its place of origin. The secret of such goodness originates in the place of origin, in the natural feed, and in the high quality milk with no additives. The verb “to make” is absolutely correct in this case because Parmigiano-Reggiano cheese is not just manufactured, but “it is made” today as it was made eight centuries ago. The visit to the diary will be followed by a tasting.

The tour will continue with the visit to a traditional balsamic vinegar producer. Known since the Roman time, it is produced by the natural fermentation an acetification of cooked grape must and aged in small casks made of different kinds of precious woods. The minimum age for the traditional balsamic vinegar is 12 minimum years, but we will also taste the 25 years old one!

Lunch will be served in a family run restaurant and it will be based on traditional specialties and accompanied by local wines. Your guide will tell you the secrets of the dishes served and their recipes.
