HALLOWEEN TIME IN BOLOGNA

HALLOWEEN TIME IN BOLOGNA
Thursday, October 31, 2019

Vorremmo condividere con voi la ricetta del famoso Pellegrino Artusi, autori del libro di cucina "Science in the Kitchen and the Art of Eating Well".

TASTE BOLOGNA IN AUTUMN: WHAT YOU SHOULDN'T MISS!
Monday, October 21, 2019

Autumn in Bologna is one of my favourite seasons, maybe because I was born in October.

There are unique elements, colours and smells, which characterize this season: the warm brown of the fields, the red of the tree leaves and pomegranate, the orange of the persimmons, the particular sunset pink light, the morning white haze, and the sense of wait.

This is the time of the roasted chestnuts, the new wine, sweet polenta, Porcini mushrooms, truffle and pumpkin tortelli!

BOLOGNA FOR FOODIES AT CARNIVAL

BOLOGNA FOR FOODIES AT CARNIVAL
Friday, March 8, 2019

Il ricettario carnevalesco emiliano romagnolo è ‘grasso’ fino all’inverosimile. Ecco alcune ricette tipiche:

VENICE CARNIVAL

VENICE CARNIVAL
Friday, February 8, 2019

In one week Venice will be the stage of the most popular events of the year, the Carnival, which will take place from February 16 to March 5 2019. It is one of the biggest, most festive and colorful celebrations in Italy. The word Carnevale may come from the Latin words carne and vale, meaning “farewell to meat”. In fact, during the 40 days of Lent, it was forbidden to offer parties or eat meat, goodies, sugar, etc. As a consequence, people were used to having parties and get rid of all the rich foods and drinks which were banned during Lent.

WHAT IS ITALIANS' FAVOURITE DESSERT?

WHAT IS ITALIANS' FAVOURITE DESSERT?
Sunday, October 28, 2018

What is Italian's favourite dessert? My answer is doubtless: Tiramisù! Did you know that "Tiramisù" is the 5th word of the Italian cookery mostly known abroad? The meaning of Tiramisù is "cheer me up" and this was the intention of the inventor of this rich coffee-flavoured dessert made of Savoiardi ladyfinger biscuits dipped in coffee, a cream of eggs, sugar and mascarpone cheese, topped with cocoa.

BOLOGNA SANDWICH? NO MORTADELLA PLEASE!

BOLOGNA SANDWICH? NO MORTADELLA PLEASE!
Tuesday, September 18, 2018

Believe it or not, the Bologna sandwich, also known as "baloney sandwich" and very famous in the US and Canada, has little or nothing in common with the foodie capital of Italy. In fact, what we normally fill our fresh out-of-the-oven bread with, is far away from the American baloney. It is by far the most typical and iconic cold cut of our homeland: Mortedella! But where does its peculiar name derive from? Maybe from mortar used to make it, or mortarum a type of sausage seasoned with myrtle berrys, or murtarum meaning fine minced meat. The origins of this delicious sausage known all over the world as the Bologna or Baloney are still uncertain.

Have you ever heard about Italy’s black gold? We are talking about the traditional balsamic vinegar, which is produced only in the areas of Modena and Reggio Emilia. The families of the area have always been very proud of their production of Balsamic Vinegar, and have a set of barrels in the attic as a seal of ancient family traditions, if not a confirmation of noble family roots. Born centuries ago as a medicinal of exclusive use of kings and emperors, it has found its place in the kitchen as a product of excellence, it enhances the flavors and enriches every dish on the Emilian table, from the most simple to ones such as salads and raw vegetables, to the most refined dishes such as filled pastas or meats.
